Joy the Baker Cookbook: 100 Simple and Comforting Recipes – Peanut Butter Bacon Cookies

Yeah, that’s right: Peanut Butter Bacon cookies. I’m a sucker for somewhat odd recipes, so I knew I had to make this one for my office’s Halloween potluck lunch.

The verdict? A cinch to make and they don’t taste odd at all! Instead, they’re soft and crunchy, sweet and salty.

But to be honest… you can’t taste much of the bacon. You could easily omit the pig from this recipe and be left with a great peanut butter cookie. (And like me, you can be a bit of a naughty ghoul and add spiced rum to the mix.) But whatever you do, don’t omit the nutmeg. A stellar, spicy addition to this cookie!**

**Note: While the cookbook version has nutmeg, I was unable to find a version on Joy’s blog that includes nutmeg.

Also, the introduction to this recipe made me laugh out loud: “…men will fall all over themselves.” Well, I think the ladies will too, Ms. Joy the Baker.
